A great way to start the day is with a bowl full of homemade Granola. Add some yogurt and fresh fruit and you are on your way to having a great day.
Granola is a crunchy muesli that is baked in the oven. This is a delicious recipe that is easy to make, has no added sugar or cooking oils like many of the store bought varieties.
Ingredients
- 200g – 2 cups of rolled oats, use raw buckwheat if you are gluten free.
- 200g raw almonds, sliced
- 100g of pumpkins seeds
- 1 teaspoon ground cinnamon
- zest from 1 orange
- 1 teaspoon of vanilla extract of bean paste if you have it
- 50g – 2 generous tablespoons of honey or maple syrup
- 70g dried cranberries or raisins
- 70g of diced dried apricots
Method
- Combine the oats and almonds, pumpkin seeds cinnamon and zest and any other nuts or seeds that you are using
- Pour over the honey or maple syrup
- Mix this very well
- Line x 2 baking trays and evenly spread mixture out on the trays. Do not pile the mixture up, if it is thick it will not toast.
- Bake in the oven for 1 hour at 120 degrees C.
- Cool on oven trays
- Add the dried fruits of your choice
- Store in a sealed container to keep fresh
Enjoy your granola with fresh fruit and yogurt and a good cup of coffee.
This granola makes a great gift and you could package it up like I have in a TYPO mason jar, add a tag with the ingredients and you have a lovely gift.

Notes
You could also add your own variation of nuts. I like to use chopped pecans. Also try adding black chia seeds and mix up the dried fruit for different variations. [br][br]To serve, use fresh yogurt and fresh fruit, pears, strawberries, or even a banana. The choices are endless, it’s up to you how you want to serve it.[br]Enjoy x
