On the weekend the kids wanted to make cupcakes. Time poor me said ‘no worries’ and quickly searched the internet for easy recipes. I wanted a cupcake recipe that was fail proof and also all done in the one bowl. I didn’t want to much mucking around and wanted it to be super super quick. I think you can guess that I found one and wanted to share it with you today.
From www.bestrecipes.com.au the easiest cupcakes ever have ingredients that most of you would have at home.
Ingredients
125g softened butter
1 tsp vanilla essence
3/4 cup caster sugar
2 eggs
1/2 cup milk
1 1/2 cup of self raising flour
I used my new Royal Baking Collection by Salt&Pepper. Don’t you love the gold finish on the muffin pan? It just makes baking so much nicer.
Line your muffin (12) cup cake pan with paper cases.
Combine all the ingredients and use your electric mixer to mix it all on a low speed to a smooth batter.
Divide the mixture into the paper cases and bake for 20 minutes at 180 degrees.
Using this simple recipe you can decorate your cupcakes any way you like.
I like mine with the tops cut off and filled with Nutella.
