What’s your 3PM pick me up?  Instead of grabbing a packet of chips or a chocolate bar, you could try these amazing vegan gluten free cookie dough balls.  They are free from dairy (vegan) and taste so delicious, they will curb your sugar craving, trust me.

This recipe is super easy.  You just need a food processor to mix it all up.

Ingredients

1 1/2 cups of raw cashews

1/2 cup pecans

1/2 cup pitted medjool dates

1 tsp vanilla extract

2 tbsp of maple syrup

4 tbs of RAW vanilla protein (or any protein powder that you have)

You could also substitute the protein powder for coconut.  Although I did not do this I imagine any dry ingredient that you like could be added.

Just add a little bit at a time to the food processor so you don’t make the mixture too dry.

Method

Blend all the ingredients together so that it all comes together in a sticky ball or just so its all combined and mixed up.  Roll balls in your hands and let them harden in the fridge.

I made up a mixture of melted coconut oil, cacao and maple syrup and dripped each cookie dough ball with the yummy chocolate.

Let them set in the fridge and then enjoy.
