This chocolate caramel slice is from the Wholefood Simply website here.  It is gluten free and dairy free and has no sugar ( apart from the sugar in the maple syrup if you use one with sugar in it).

I was a little sceptical at first about how really wholesome ingredients can come together and make such a delicious, sweet slice.  Seriously though, when I made it, it didn’t last long in my kitchen at all and I will definitely be making this again.

Ingredients

  • BASE
  • 2 cups desicattted coconut
  • 1 tablespoon cacao/cocoa/carob
  • 10 medjool dates, seeds removed or I used Trident dates (2 cups)
  • 1 tsp of water (to bring mixture together)
  • FILLING
  • 1 cup firmly packed medjool dates seeds removed or I used Trident dates (1 1/2 to 2 cups)
  • 1 cup Macadamia nuts
  • 1/2 teaspoon vanilla extract
  • TOPPING
  • 1/3 cup of maple syrup or honey
  • 2 tablespoons cacao/cocoa/carob
  • 1/2 cup solid coconut oil

Method

  • For the base, blend the ingredients until it comes together.  Blend on a high speed so the mixture resembles fine bread crumbs. I used a little bit of water so the mixture would press together. Press down firmly in to a lined slice tin.  Refrigerate or freeze to set.
  • For the filling, blend all ingredients to a smooth paste.  spread over the base and refrigerate or freeze to set.
  • For the topping, blend together the ingredients until smooth and well combined.  Top the slice with the chocolate mix and freeze or refrigerate until set.
  • Cut into slices and enjoy.
