When it comes to breakfast I am usually starving.  I run most mornings as well as cross train with weights so by the time I get back, have a shower, get the kids up, make beds I am well and truly starving.  I am always on the lookout for great new recipes and stumbled across this chocolate mud breakfast bowl from the latest Real Living magazine and though I’ll give it a try.  Much to my delight it was so delicious and filled me right up so I thought I’d share it with you today.

Ingredients

This is meant to serve one but it made quite a bit so I would say serves 2.

  • 1/2 cup almond milk
  • 1/2 cup chia seeds
  • 1 frozen banana
  • 1/2 avocado
  • 1 tbsp raw cacoa powder
  • 2 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 200ml coconut water ( but I used water)
  • 1/2 cup ice
  • 100g roasted slithered almonds
  • 1 tsp toasted coconut
  • 1 tbsp goji berries

Method

  • Pour the almond milk and chia seeds into a jug, stir and set aside until the mixture begins to thicken.
  • Place banana, avacado, cacao, maple syrup, cinnamon, coconut water and ice into the blender and blend together.  You can add more frozen banana if you want to thicken it up a little but I thought it was just right.
  • Add the chia and almond milk and blend again until it is all mixed together.
  • Spoon the mixture into a cold bowl and top with almonds, goji berries and almonds.

You can use activated almonds if you prefer.  Activated simply means they have been soaked in water to activate the germination process then hydrated a low temperature.  You can buy them at the health food store or you can make your own.
