I’m always looking for sneaky ways to get some vitamins and minerals into the kids without them knowing.  The first thing my older son says to me is ‘is that healthy Mum’ but then goes ahead and eats almost everything I’ve baked at once.

With limited sunlight in Winter which can dampen your mood I recently discovered the wonders of Maca powder.  I bought a packet at my local health food shop and after reading an article in the latest edition of Nourish magazine I was excited about putting the vitality back into our lives.

Hence where this yummy recipe is from.  These bites have all the goodness with a couple of teaspoons of Maca added to them.  Packed full of vitamins and minerals, I think I’ve found my new super food.

This recipe only took a few minutes to make and even less time for the kids to devour.  I was onto a winner.

Ingredients

  • 1 cup cashews
  • 2 tsp Maca powder
  • 6 medjool dates
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/4 cup of cacao nibs

Method

Add the maca powder and the cashews into your blender.  Blend until crumbly, then add all the other ingredients except for the cacao chips.  Blend until the mixture comes together into a loose dough.

Transfer to a bowl and stir in the cacao chips and then roll into balls.

Refrigerate or eat straight away.  Store in an air tight container.
