Have you tried black rice?  I have read that it’s rich in antioxidants and iron and is low GI (which means it fills you up for longer)  so I thought I’d give it a try.  Anything to fill me up lately as I often wake up in the middle of the night with hunger pains.  The kids really liked it too.  You could use any rice with this recipe but give the black rice a go, you may love it also.

Ingredients

  • 1 tablespoon of tamari or soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon toasted sesame oil
  • 1 garlic glove minced
  • 500g of chicken breast
  • salt and pepper

To make the salsa

  • 1 bunch of basil
  • 3/4 cup of diced pinapple
  • 1/4 cup diced capsicum
  • 1 tablespoon chopped mint
  • 1 teaspoon of minced jalapeño (I used dried)
  • 1/2 avocado
  • 1/2 teaspoon of fresh lime juice

I double this recipe to feed a family of four ( Archer won’t eat it).  Just dice and add all the ingredients together.

Method

Marinade the chicken breast fillets with the ingredients above in a plastic bag.  Using a skillet knife, make a few slices in the chicken breast so the marinade soaks in.  Leave for 20 minutes before grilling.

Make up the salsa and set aside.  Grill the chicken to your liking.  Cook the black rice as per the instructions on the packet.

Serve altogether and eat. Yum!
