The other day the kids asked me to make some biscuits.  I didn’t have any chocolate chips as I usually make a batch of  chocolate chip biscuits so I decided to go through my recipe books.

I found a recipe for raspberry jam drops.  After quickly looking through the ingredients list I had every thing to start making a batch.

Ingredients

  • 90g butter softenend
  • 1/3 cup caster sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla essence
  • 1 cup of self raising flour
  • 1/3 cup custard powder
  • 3 tbsp raspberry jam

Using an electric mixer, beat butter and sugar until light and fluffy.  Add the milk and vanilla essence.  Add flour and custard powder and mix to form a soft dough.

Roll the mixture into a ball and press down to form a round biscuit shape.  Using a spoon or your thumb (which is what I use) make a small indentation and add a teaspoon of jam.

Bake for 180C for 15 mins.

These biscuits are such a yummy treat for Autumn and Melbourne has had some perfect weather too.
