This would have to be one of the easiest biscuit recipes I know. It’s pretty much fail proof for those that are not that confident with baking and it’s a great recipe to start your kids cooking with.
The only problem is when I make them, they vanish within a few minutes. I think they just taste too good.
Here is the recipe for you.
Ingredients
- 125 g butter chopped and at room temperature
- 1/2 cup caster sugar ( but I use 1/4 cup)
- 1 tsp vanilla
- 1 egg
- 250 g Choc Chips ( I use Cadbury )
- 1/2 cup of desiccated coconut
- 1 1/2 cups of SR flour
Method
- Preheat the oven to 180C
- Using an electric mixer or beaters, beat the butter, sugar and vanilla extract till its light and creamy
- Add the egg and beat well, scraping down the sides so the mixture combines well
- Using a wooden spoon, mix in the coconut, chocolate chips and the flour
- Mix well till combined. If your mixture is to wet, add a little more flour
- Roll teaspoon size balls and then flatten on a baking tray
- Bake in the oven for 14 to 20 mins or until golden
- Be quick to have one as they won’t last long
Enjoy with a cuppa for morning or afternoon tea.
You can choose any flavour chocolate chips, try white or dark. You could even eliminate the chocolate chips and add your favourite nuts or dried fruit.
