Feeding hungry teenagers is never ending. You might think that baking a batch of chocolate chip biscuits or a yummy slice, it would be enough for school lunches. Well that’s not the case in my house. I made this old school raspberry slice and believe me, it was gone that night! I couldn’t believe it. Hungry teenagers and a husband who can’t stop at one slice. Anyway, this slice must have been so good so I thought I’d share it today.
Ingredients
1 cup plain flour
1/4 cup caster sugar
125g melted butter
1 1/4 cups of raspberry jam
2 cups of desiccated coconut
1/4 cup caster sugar
2 eggs whisked
Method
Preheat the oven to 180c degrees. Line a 16cm x 26cm slab pan with non stick baking paper.
Combine the flour and sugar and add in the melted butter. Mix until well combined and then press dough into the prepared tin.
Bake this for 15 minutes. Allow to cool and then spread the jam on top.
Make up the topping by combining the sugar, eggs and coconut. Spread this mixture over the jam.
Bake for 20 minutes or until golden.
Set aside to cool before cutting into squares, then watch it disappear.

It has been years since I have had Raspberry Slice! Might need to make a batch over the long weekend.
