I just had to share this fantastic and extremely easy, gluten free, dairy free lemon and macadamia shortbread recipe. So easy that you can whip them quickly when you feel like a little something. The recipe is from the Wholefood Simply website ( which I highly recommend). Careful, there’s always a sneaky hand ready to steal them cause they are so yummy.
Ingredients
- 1 1/2 cups desiccated coconut
- 1 cup raw cashews/macadamias
- zest of one lemon
- juice of half a lemon
- 2 tablespoons honey
Method
- Preheat the oven to 175 C.
- Line a baking tray with baking paper.
- Place all the ingredients into the food processor in order of list.
- Blend until the mixture is completely broken down and sticks together.
- Press and shape into biscuits onto the tray.
- Bake for 10 minutes.
Enjoy once cooled and store in an airtight container, if they last that long.
I’m confused this is a macadamia and lemon shortbread receipe and I see no macadamia nuts????
