Everybody loves a celebration, and everybody loves a cake.  This cake is our family celebration cake and it’s easy peasy to make so I thought I’d share the recipe with you today.  It’s a delicious chocolate cake with chocolate icing.celebrationcake1_opt-2

Our celebration was the fact that my daughter started high school and my son started primary school.  As exhausting as it was we made it through the first emotional days.  It was nice to come home to a homemade chocolate cake to celebrate.

Everyone was happy to start the year and I was happy to get back into routine.  Now about this cake.  It’s really quite easy and it tastes as good as it looks.

Ingredients

  • 125 g butter
  • 2 tbsp cocoa
  • 1/2 cup milk
  • 2 eggs
  • 3/4 cup caster sugar
  • 1 cups self raising flour
  • Ready make icing – I used Betty Crocker ready made chocolate icing available from the supermarket

Method

  • Melt butter, cocoa and milk in a saucepan.   Stir over low heat until butter has melted. Put aside to cool.
  • Preheat the oven to 180C and line a round cake tin with baking paper.
  • Using an electric mixer, beat eggs and sugar for 6 mins or until thick and creamy.
  • Fold in the sifted flour and cocoa mixture.
  • Pour into the cake tin and bake for 40 mins.  Checking to see if cooked with a skewer.
  • Let it cool on a wire rack and then ice and decorate.

I hope you enjoy making this easy celebration cake.  It made my kids eyes light up when they saw it.  It was nice to sit down and discuss the exciting first days with a cup of tea and a piece of cake.  Even if my older son missed the bus on the first day, we will get there eventually.
