An easy Easter gift or an Easter chocolate delight to share at the table this Easter it would have to be the Easter slab. I stumbled across this recipe in the the Hooray magazine. Such a great idea that is super easy and you probably have most of the ingredients in your pantry. Anyway, here is my spin on the recipe.
Ingredients
- 2 x 300g of the best quality dark chocolate you can buy.
- 1/2 cup pistachios
- 1/4 cup of goji berries
- 1/4 cup walnuts
- 1/4 cup organic shredded coconut
- 1/4 cup fresh raspberries
- 1/4 cup fresh strawberries
- Easter eggs
Melt the dark chocolate. The best way to do this is to put a bowl over a saucepan of boiling water. Gently melt the chocolate in the bowl. Take the bowl off the boiling water when it has melted and stir in 1/2 of the pistachios. Whilst the chocolate is melting, line a baking dish with baking paper so it drapes over the sides.
Pour the chocolate into your lined tray.
Top with all the ingredients. You can get creative and add ingredients that you might like. I even added pepitas and you could add dried fruit, cashews, macadamias, they would all be nice.
Put it in the fridge to set. It might take a few hours, if you can wait that long. Once set, break into shards and bite size pieces and serve.
These would be lovely wrapped in cellophane and tied with a ribbon as an Easter gift.
