These biscuits were so delicious that my kids almost ate the whole batch.  These would make a lovely Christmas gift for friends as the cranberries give them a festive feel.

No mixer required which was great as less to clean up.

Inspired by a recipe from Australian House and Garden.

Ingredients

  • 185 g unsalted butter
  • 3/4 cup (105g) unsalted macadamias
  • 1 cup firmly packed brown sugar
  • 1/2 cup caster sugar
  • 1 1/2 cups self raising flour
  • 1/2 cup plain flour
  • 1 egg
  • 1 egg yolk
  • 150g white eating chocolate or white chocolate chips
  • 3/4 cup dried cranberries

Method

Preheat the oven to 180c degrees or 160 fan forced.

Line three oven trays with baking paper.

Melt the butter and allow to cool slightly.

Gently heat and brown the coarsely chopped macadamias in a fry pan. When they are browned, remove from heat and set aside.

Sift sugars and flours in a large bowl, add nuts.  Lightly beat whole egg, egg yolk and butter with a fork in a small bowl until combined. Stir this into the flour mixture until it forms a soft dough.  Stir in the chopped cranberries and chocolate.

Roll rounded teaspoons of mixture into balls.  Try to get each ball the same size and roundness so that when they cook they will look the same.  Place the mixture balls about 8cm apart as the mixture will spread and flatten.

Bake for about 12 mins and cool on trays.

Store in a airtight container for up to 1 week if they don’t get eaten first.

I had some old CD slips.  By placing a few biscuits in each CD slip, wrapping some twine around them and adding a cute label, you have a sweet gift.

This would make a great teachers gift at Christmas.  Just add a festive name tag.
