Over Christmas we tend to indulge in chocolates, chips, all the yummy food, well I know I do. My family was invited to a birthday party so I thought I would take a dessert so that when all the naughty food comes out I can just have a slice of this guilt free Bounty Bar. This recipe is from the fantastic Wholefood Simply website and I encourage you all to take a look. Filled with gluten free, dairy free, grain free, egg free options for the whole family.
This bounty bar is gluten free, dairy free, grain free and egg free, perfect for those following the Paleo diet.
Give it a try, you might surprise yourself with how delicious a dessert can be that is free from refined sugar.
Slice
- 2 cups desiccated coconut
- 1/2 cup raw cashews
- 2 tablespoons honey
- 1/2 teaspoon concentrated natural vanilla extract
- pinch of salt
Line a mini loaf tin with baking paper over hanging the sides.
Place the ingredients into your processor and blend at high speed until the mixture resembles a smooth thick paste. Press the mixture firmly into the lined loaf tin and place in the fridge while you make your chocolate.
Chocolate
- 3 tablespoons coconut oil
- 4 tablespoons cacao or cocoa
- 2 tablespoons honey
- desiccated coconut to sprinkle on top
Place the coconut oil and honey into a small bowl and blend it together with a fork you can use your food processor, then mix in the cacao or cocoa until it is smooth and looking delicious.
Spread the mixture evenly over your slice. Sprinkle the coconut ( optional, I didn’t use it), over the top and return the slice to the fridge to set. Cut. Eat. Enjoy.
