These healthy muffins are very basic to make, gluten free and are extremely healthy and low in fat.
I am not a nutritionist but I can certainly tell from the ingredients that there is nothing bad in them.
Why don’t you make some for afternoon tea or give them as a gift as I received them. My good friend baked them for me and now I am addicted.
Ingredients:
- 2 cups Almond Meal
- 2 tsp Baking Soda
- 1 tsp Sea Salt
- 1 tbsp Cinnamon
- 1 tbsp Cacao Chips
- 1 cup Dried Cranberries
- 2 Ripe Bananas
- 2 Organic Free Range Eggs
- 1/4 cup Coconut Oil
Mix the dry ingredients together No.1 to No.5.
Blend ingredients No. 6 to No. 9 in a food processor.
It should end up looking like this.
Mix together until just combined. Then add cacao chips and mix together.
Put mixture into a greased muffin tin. I used the coconut oil to grease the tray lightly.Bake for 20 – 25 minutes on at 175 C or until golden brown.
Let them cool a little in the tray before gently removing.
Enjoy with a cup of tea for a healthy snack on the go.
