I am trying to cut down on sugar and do you know how hard it is? This stuff is in everything! My brother watched the The Sugar Film the other day and had a renewed opinion on sugar. So, I try my hardest to cut the sugar intake down for the family. Just reducing your daily sugar intake is a great thing as cutting it out altogether is quite hard. I am no nutritionist but the one thing I can tell you is that these healthy chocolate muffins taste good and if the kids eat them then that is a good thing too.
Inspired by the Show and Tell On line recipe, here is my take on this yummy treat.
What you’ll need:
1 and 1/2 cup grated zucchini – they’ll never know..
1 cup almond butter
1/2 cup raw cacao powder
1/3 cup maple syrup
1 egg
1tsp sea salt
1tsp vanilla extract
1/2 cup organic dark chocolate cut into pieces. I used a supermarket bought block.
1 tsp baking soda
Mix all the ingredients in a bowl but add the chocolate pieces last.
Line a muffin tin with muffin cases, my mixture made about 10.
Place in a preheated oven 180C for 25 minutes.
Store in an airtight container.
