My kids and I eat a lot of Nutella. In case you are not familiar with the sweet stuff it’s a chocolate spread made with hazelnuts that is really really delicious and chocolatey.   I know it’s not the best nor the healthiest but it tastes so great on fresh pancakes and hot toast.  Agree?  Well I discovered a new recipe for Nutella without all the sugar and nasties.   The kids may not like it but for me this recipe was great.  It has a very nutty taste and slightly bitter and not at all sweet.  Give it a try, I know it’s better for you than the commercial stuff.

Inspired by the Lorna Jane Move Nourish Believe recipe.

Ingredients

  • 1 cup hazelnuts
  • 1/4 cup light coconut milk
  • 1/4 cup of cocoa powder of chopped dark chocolate (72%)

Method

  • Heat the oven to 150C (300F).
  • Line a baking tray with baking paper and put the hazelnuts on it evenly and bake for 10 minutes.
  • While they are hot, lightly rub with a damp cloth or paper towel to remove the skins as they are bitter.
  • Add the hazelnuts to a blender and blend until they are smooth and form a nut butter.
  • Create of double boiler and heat the coconut milk and chocolate (or powder) until combined together.
  • Add the chocolate coconut mixure to the blender with the nut mixture and blend until the consistency of Nutella is formed.
  • Put into a jar and seal with a lid and enjoy

I found this recipe to be good although I don’t think the kids would like it which is disappointing as that was my main reason to make this.  Let me know if you like it.  Nothing beats the sweet real deal and everything in moderation is ok.
