I just had to share this fantastic and extremely easy, gluten free, dairy free lemon and macadamia shortbread recipe.  So easy that you can whip them quickly when you feel like a little something.  The recipe is from the Wholefood Simply website ( which I highly recommend).  Careful, there’s always a sneaky hand ready to steal them cause they are so yummy.



  • 1 1/2 cups desiccated coconut
  • 1 cup raw cashews/macadamias
  • zest of one lemon
  • juice of half a lemon
  • 2 tablespoons honey



  • Preheat the oven to 175 C.
  • Line a baking tray with baking paper.
  • Place all the ingredients into the food processor in order of list.
  • Blend until the mixture is completely broken down and sticks together.
  • Press and shape into biscuits onto the tray.
  • Bake for 10 minutes.


Enjoy once cooled and store in an airtight container, if they last that long.
