These delicious cookies will be an addictive treat for lovers of peanut butter. I made a batch to take to my brothers birthday. They didn’t last long.
These cookies don’t take long at all to bake and make a delicious afternoon treat. You could also top them with whole almonds for something different.
Ingredients
- 100g butter softened
- 1/2 cup smooth peanut butter
- 1 teaspoon vanilla extract
- 1 1/4 cups brown sugar
- 1 egg
- 1 1/4 cups plain all purpose flour sifted
- 1/4 teaspoon bicarbonate (baking) soda sifted
- Cachous or almonds for decoration
Method
- Preheat the oven to 180C.
- Place the butter, peanut butter, vanilla and brown sugar into an electric mixer and beat for 8 – 10 minutes until well combined.
- Add the egg and beat for 2 to 3 minutes until light and fluffy.
- Add the flour and bicarbonate soda and beat until a smooth dough forms.
- Roll the dough out between two sheets of baking paper to 5mm thick.
- Refrigerate for 30 mins.
- Using a round cookie cutter 7cm, cut out rounds (22 approx) from the dough.
- Bake on a tray lined with baking paper. Press in your choice of decoration before placing in the oven. Don’t place them to close together, allow room to spread, bake for 12-14 minutes or until the edges are golden.
- Allow to cool on the rack. Store in an air tight container.
These are a great cookie to bake with the kids and can be enjoyed any time of the day. Just try to resist them when they come out of the oven. I bet you can’t.
