I try my hardest to bake as many snack type foods at home. To be honest I really have to push myself to bake as I actually don’t enjoy it that much. I know that is hard to believe because I have a lots of posts and Instagram images of baking that I do.
What keeps me motivated and pushes me to bake is that I want to give my family good food without all the nasties. These Raspberry Bliss Balls are from the Wholefood Simply website. Wholefood Simply is fast becoming my favourite go to place for awesome recipes. Do go over and visit as you will be so surprised at how many great recipes there are to bake. Most of them are grain free, gluten free, free from refined sugar, egg and dairy free. Anyway, enough waffling on, here’s the recipe.
These Raspberry Bliss Balls as I like to call them are gluten free, dairy free, free from refined sugar and can be nut free too, so perfect for school lunch boxes.
Ingredients
- 1/2 cups frozen raspberries
- 4 medjool dates seeds removed
- 1/2 cup raw cashews or use sunflower seeds for a nut free version
- 1 cup of desiccated coconut
Method
- Place all the ingredients in a food processor and blend until broken down and well combined.
- Shape into small bit size balls.
- You can leave them plain or roll in more coconut. Try rolling in cacao or drizzle melted dark chocolate.
- Set in the fridge.
