I have teamed up with Salt&Pepper for a bloggers bake off.  Three of my other favourite bloggers have joined into play a bloggers baking war and today I share one of my favourite recipes, self saucing chocolate puddings.10523997_805675289473363_979978202372398927_n_opt

 

It’s a delicious, goohey, chocolately delicious dessert that is simple to make and quick to bake.

Ingredients

  • 1/2 cup of cocoa + extra for dusting
  • 3 large eggs
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • cooking oil spray
  • 1/2 cup plain flour
  • 1 tbsp icing mixture for dusting
  • 125g butter melted

Method

  • Preheat the oven to 200C
  • Lightly spray a 12 hole cupcake pan.
  • Mix the melted butter, cocoa and sugar until smooth.

  • Beat in the eggs one at a time.
  • Gently fold in the flour until just combined.

  • Pour the mixture into the 12 hole muffin tin.
  • Bake for 10 minutes so that the centre are still soft.

Set aside for 5 minutes before gently removing from the muffin tin.

Sift icing sugar and cocoa over the top for serving.  Serve warm for a delicious dessert with whipped cream and strawberries.
