Vanilla star cookies are a great cookie to bake as treats but to also take as a ‘thank you’ for a friend. My kids love taking them to friends houses just to say a little thanks for having me.
Inspired by the Donna Hay version in the Celebrate Issue 60, this recipe has fast become a family favourite.
Ingredients
- 125 g butter
- 1/2 cup caster sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1 1/2 cups plain flour
- 1 tablespoon of cocoa (Dutch if you have it) sifted
Method
- Cream the butter and sugar in an electric mixer until pale creamy.
- Add egg and vanilla and beat for a further 2-3 mins until well combined.
- Add the flour and beat until a soft dough forms.
- Remove 2/3 of mixture and beat remainder with cocoa powder.
- Roll out dough onto baking paper (between 2 sheets ) to about 3mm thick.
- Refrigerate this for 30 mins.
- Preheat the oven to 160 C whilst waiting.
- Cut out the shapes and place them on baking trays to bake for 12- 13 minutes.
- Allow to cool on wire racks.
These can be kept in an air tight container for up to one week.
Enjoy with a cuppa. So easy even the kids can make them.
