Quick, easy and great for school lunch boxes. Popcorn snack bars are a great way to curb those afternoon cravings.

Ingredients

  • 8 cups of popped popcorn. I used the pop in a bag popcorn from the supermarket. Its best to use the one with less butter and unsalted if you can.
  • 2 cups of rolled oats
  • 1 cup of nuts. I used macadamias and chopped pecans but you can use any type of nuts.
  • 1 cup of raisin or any chose of dried fruit like sultanas.
  • 3/4 cup of honey
  • 3/4 cup of brown sugar
  • 1/2 cup of chocolate chips, white, milk or dark.

Method

Pop the popcorn, while its popping mix the brown sugar and honey in a saucepan and bring to the boil. Stir until all sugar is dissolved and put aside.

In a very large bowl place the popcorn, oats, fruit and nuts. Make sure you pick out all the un-popped popcorn. Pour the honey syrup over the dry mixture. Make sure everything is mixed in properly and the syrup covers all the popcorn mixture.

Put the mixture in a greased lamington tin and push down firmly with your hands. Put the chocolate chips on the top and push down.

Place in the fridge for a few hours to set before cutting into snack bar sizes.

Enjoy with a cup of tea or coffee.

These are great for the kids school lunch boxes, just eliminate the nuts if your school is nut free.

Serve with a cup of tea or coffee for a mid morning snack or afternoon tea. Eliminate the nuts for school snacks if your childs school has a nut free policy. Try mixing it up and add different dried fruits or a different combination of nuts. Happy baking.
