Quick, easy and great for school lunch boxes. Popcorn snack bars are a great way to curb those afternoon cravings.
Ingredients
- 8 cups of popped popcorn. I used the pop in a bag popcorn from the supermarket. Its best to use the one with less butter and unsalted if you can.
- 2 cups of rolled oats
- 1 cup of nuts. I used macadamias and chopped pecans but you can use any type of nuts.
- 1 cup of raisin or any chose of dried fruit like sultanas.
- 3/4 cup of honey
- 3/4 cup of brown sugar
- 1/2 cup of chocolate chips, white, milk or dark.
Method
Pop the popcorn, while its popping mix the brown sugar and honey in a saucepan and bring to the boil. Stir until all sugar is dissolved and put aside.
In a very large bowl place the popcorn, oats, fruit and nuts. Make sure you pick out all the un-popped popcorn. Pour the honey syrup over the dry mixture. Make sure everything is mixed in properly and the syrup covers all the popcorn mixture.
Put the mixture in a greased lamington tin and push down firmly with your hands. Put the chocolate chips on the top and push down.
Place in the fridge for a few hours to set before cutting into snack bar sizes.
Enjoy with a cup of tea or coffee.
These are great for the kids school lunch boxes, just eliminate the nuts if your school is nut free.
These look delicious Yvette. Going to give these a try 🙂
Hi Erica
I make them all the time. They taste great and you know you are having something good. Just eliminate the nuts for nut free school snacks. Thanks for stopping by.
