I love having friends over for Christmas get togethers. I don’t want to spend half the day in kitchen though preparing dessert, but I want the food I serve to be delicious.  This is where my apple crumble recipe comes in very handy.

It’s super fast and most of the ingredients you will most probably have in your pantry.

Ingredients

  • 6 medium red or green apples
  • 1 cup of juice, preferably apple but I have used orange juice also
  • 1 tsp vanilla extract
  • 1/4 tsp of ground cinnamon
  • zest from 1/2 orange

Crumble Topping

  • 1 1/2 cups of rolled oats or you can use quinoa
  • 1/2 cup desiccated coconut
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla
  • 3 tbs brown sugar
  • 3 tbs maple syrup
  • 1/2 cup of macadamias or walnuts
  • 1/2 put white chocolate bits (preferable)

Method for the apples

  • Peel, core and cut the apples into wedges
  • Place them in a saucepan with juice, vanilla, cinnamon and orange zest.
  • Cook over low heat until the apples have completely softened, this is about 20 to 30 mins
  • You can place a lid on the apples to get them to cook faster.  Remove the lid for the last 10 mins to help evaporate excess moisture.

To make the crumble

  • Combine all the ingredients in a bowl and stir until the mixture is all moistened by the maple syrup.
  • Preheat the oven to 160C.
  • Pile the apple mixture into baking dish (one large dish or 6 to 8 smaller ramekin size dishes for individual serves)
  • Scatter the crumble over the top and bake for 30 mins or until golden,
  • Remove from the oven and serve alone or with your favourite ice-cream.

Once baked, if there are any left overs store in the fridge for a couple of days.

Notes
If I bake this to take to someone’s house I will place the apples and crumble mixture into a disposable aluminium tray. That way your host can bake the crumble and the keep the tray.
