My daughter asked me the other night to make some banana choc chip muffins. I haven’t made these in such a long time and searched up for a simple recipe. The last thing I wanted to do on a Sunday night was cream eggs and butter. I found this really easy recipe where you mix everything together with no beating involved. They were a hit and everyone loved them. I hope you like this recipe too.
Ingredients
- 60 g butter melted
- 2 cups of self raising flour
- 1/2 cup of caster sugar
- 1/2 cup of milk
- 2 eggs
- 2 ripe bananas, mashed
- 1 cup Nestle choc chips
Method
Preheat the oven 200C or 180 C fan forced. Line a muffin tray with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choice bits. Don’t beat the mixture to much or the muffins will be tough.
Spoon the mixture evenly into the muffin cases. Bake for 20 minutes or until firm on top when lightly touched.
Enjoy, they won’t last long and make a great lunch box treat.
