A very good friend of mine introduced me to this wonderful idea which is called ‘breakfast pudding in a jar’.
It is quite simply that and you make the pudding up in the jar the night before and it soaks overnight, doing its magic all in the convenience of a jar. You simply pull it out of the fridge in the morning, add some maple syrup or honey if you wish and enjoy.
Ingredients
- 1 cup of oats
- almond milk
- half a banana
- LSA chia seeds handful
- walnuts handful
- pepitas handful
- 1/2 cup blueberries
- any other ingredients that you like e.g. cranberries
Method
Place the oats and choice of ingredients in the jar. You can mix it up and add or subtract what you wish. The above ingredients are what I used in my pudding.
Put the almond milk in and fill to the top. The liquid will soak into the ingredients overnight and make it like a pudding by morning.
You could use plain milk, soy and any type of milk you wish.
Place in the fridge for soaking.
Drizzle with maple syrup or honey for a touch of sweetness.
Enjoy straight from the jar or empty contents into a bowl.
A filling, hearty, healthy breakfast that will keep you going to lunchtime.
This makes a lovely gift, just remember that if you add any fresh ingredients that it would need to be given that day. Don’t forget to add a tag saying it needs to go in the fridge.

This sounds good! Mine are a bit different in that I use 1/3 cup oats and 1/3 cup natural pot set yoghurt. I also use a splash of lite milk to help soften the oats!

Hi Yvette, here I am going through your kitchen to find out some nice recipes for breakfast without lactose. Can you tell me how long I can keep these in the fridge? I mean can I make for example three in advance or is it better to make them fresh every night? Thanks for the tip!

So glad you like some of my recipes. I am assuming you are talking about the ‘Breakfast puddings’ in a jar. I used almond milk in mine so I just checked the use by on the carton. The almond milk I used had to be used in 5 days of being opened and refrigerated. I have 2 jars that I use. So I make up to in advance. That way I can keep track on the milk and also I like to keep the fruit as fresh as possible.
