Do you wake up in the morning craving for something a little bit more full filling than your boring old cereal? You don’t want to eat sugar and butter either? Then these pancakes are for you. They are so simple to make and my kids love them.
Ingredients
- 1 cup of Self Raising Flour
- 1/2 teaspoon of baking powder
- 3/4 cup of milk – I use skinny milk
- 1 large egg
- 1/2 cup of yogurt – any type is fine
- 1 teaspoon of vanilla extract
Method
- Mix all the ingredients together by hand.
- Leave for 5 to 10 minutes to let the baking powder start reacting.
- Grease a frying pan lightly with a little butter ( don’t use butter if you want to keep it completely butter free).
- Drop tablespoons of the batter onto the hot frying pan – try to keep them the same size so they cook together and are ready at the same time.
- Flip them over till golden.
- Add your favourite topping.
To keep them sugar free don’t add Nutella to yours. I have to say the Nutella was definitely a hit in our house and they do taste very delicious.
I cooked all my pancakes and stored the uneaten pancakes in the fridge. Keep for one day.
