Easy banana bread can be made in the morning and enjoyed at morning tea, it’s really that easy. Use up all those brown bananas and enjoy this delicious treat.
Ingredients
- 1 cup of plain flour
- 1/2 cup of self-raising flour
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 125g butter melted, cooled
- 2 eggs, whisked
- 3 ripe bananas mashed
Preheat the oven to 180C and line and grease a deep loaf tin.
Method
- Combine flours, sugar and cinnamon in a large bowl.
- Whisk the eggs and add to the melted butter.
- Stir in banana.
- Stir the wet ingredients in to the dry ingredients.
- Spoon into the loaf tin and smooth the top.
- Bake for 40-45 mins. Test with a skewer to see if it is ready. If the skewer comes out clean, it’s ready.
- Let it cool in the tin for 10 mins and then turn on to a wire rack.
Enjoy warm with butter and a cup of tea or coffee.
