Easy banana bread can be made in the morning and enjoyed at morning tea, it’s really that easy.  Use up all those brown bananas and enjoy this delicious treat.bread1_opt


  • 1 cup of plain flour
  • 1/2 cup of self-raising flour
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 125g butter melted, cooled
  • 2 eggs, whisked
  • 3 ripe bananas mashed


Preheat the oven to 180C and line and grease a deep loaf tin.



  • Combine flours, sugar and cinnamon in a large bowl.
  • Whisk the eggs and add to the melted butter.
  • Stir in banana.
  • Stir the wet ingredients in to the dry ingredients.
  • Spoon into the loaf tin and smooth the top.
  • Bake for 40-45 mins.  Test with a skewer to see if it is ready.  If the skewer comes out clean, it’s ready.
  • Let it cool in the tin for 10 mins and then turn on to a wire rack.


Enjoy warm with butter and a cup of tea or coffee.
