I love a little bit of something sweet in the afternoon’s, you know around 4pm, just before dinner time. I don’t want to eat anything that’s bad for me, just a little something yummy to get me through this slump. That’s when these little beauties – the healthy double chocolate cookies are the best. From the Wholefood Simply website, this is another, easy fabulous, guilt free treat for myself ( and the kids ).
What you’ll need:
- 1 cup raw cashews
- 1 cup desiccatted coconut
- 1 tablespoon cacao
- 2 tablespoons coconut cream
- 2 tablespoons honey
- 1/2 tsp natural concentrated vanilla extract
- pinch of salt
Method:
Preheat the oven to 175C. Line a baking tray with baking paper.
Place all the ingredients into the blender and blend until the mixture comes together.
Use damp hands to form ball shapes and place on the tray and into the oven for 10-12 minutes.
Let them cool and drizzle with dark melted chocolate. I used Lindt dessert 70% cocoa cooking chocolate.
