Now I love a muffin or two and they go down so well with a nice coffee don’t you think? So making a healthy alternative to the sugary muffin you buy at the cafe has become a Sunday ritual. These healthy lemon muffins give you the same satisfaction but are free from refined sugar and are also gluten free.
Here’s a list of the ingredients you’ll need.
- 1/3 cup maple syrup
- 3 eggs
- 1/2 cup natural or coconut yogurt
- zest of one lemon
- juice of two lemons
- 1 tablespoon of coconut oil melted
- 3 cups of almond meal
- 1 teaspoon of bicarb soda
These are so simple to make. Just preheat your oven to 175C and grease a 12 -14 standard muffin hole tray. I made 12 so they were nice and big. Place the eggs, maple syrup and yogurt in a medium sized bowl and whisk together. Add the lemon juice and zest and whist again. Add the the oil and whisk and then add the almond meal and whist to combine. Lastly add the bicarb soda.
Spoon the mixture evenly into the muffin tray and bake for 20 – 25 mins or until lovely and golden on top.
Let them cool if you can resist and then enjoy. I keep mine in an airtight container. Enjoy with a cuppa.
