I’m always after a snack.  Every time I make myself a cup of tea or coffee I feel like I have to eat something. Sound like you too?  So I try my best to be healthy and keep easy snacks in the kitchen.  Now these Lemon and Coconut bliss balls took me no time at all, are dairy and gluten free and taste delicious!!!

The ingredients are,

  • 1 cup of raw cashews
  • 1 cup of desiccated coconut
  • zest of two lemons
  • 1/2 teaspoon of concentrated natural vanilla extract
  • pinch of salt
  • 2 tablespoons of maple syrup

Extra coconut for rolling.

Method

  • Place all the ingredients into your food processor in the order of the ingredients list.
  • Blend until all combined and so that the nuts and coconut have broken down.
  • Using your hands roll into balls and then roll into coconut.
  • Put in the fridge to set.

Put the kettle on and make yourself a cup of tea and indulge in a guilt free lemon and coconut bliss ball.
