I have a lovely friend who quite often sends me little gifts. Gifts that she has homemade and not to mention are always delicious and healthy. You know the kind of friend who lifts your spirits and you find inspiring, well my friend is like that.
Yesterday she dropped off this delicious gluten free, dairy free coconutty granola and I wanted to share the recipe with you all.
In support of baking our blues away an annual baking day of goodwill on July 15 to show someone you care I was gifted this coconutty granola. What a great way to show someone a random act of kindness. Put it in your diary and jump on board everyone.
So back to the recipe here are the ingredients.
- 2 x cups of coconut flakes
- 1 x cup almonds chopped
- 1/4 cup pepitas
- 1/4 cup sunflower seeds
- 2 x tablespoons chia seeds
- 1 x tablespoon of cinnamon
- 1/4 cup of coconut oil
- 2 x tablespoons rice malt syrup
Mix it all together and bake for 15 mins at 180 C degrees.
Enjoy with fresh raspberries, a dash of almond milk and coconut yogurt. Of course you can add your own toppings and milk, it will still taste delicious.

This was so delicious I used Putre Maple syrup instead as I could find rice malt syrup. My mixture was still quite wet when it came out. Is that right?
