This is a delicious snack of chocolate and date brownies and is fantastic to have for morning or afternoon tea.  It’s chocolatey and chewy and the dates make these brownies so soft and delicious.

Ingredients

  • 1 cups chopped dates
  • 250g cooking chocolate chopped
  • 150g butter chopped
  • 3 eggs
  • 1 1/4 cups brown sugar
  • 1 tsp vanilla extract
  • 2 tablespoons of cocoa
  • 3/4 cups of flour
  • 1/2 cup chopped pecan or walnuts

Method

  • Preheat the oven to 170C
  • Grease a 28cm x 18cm x 3cm slice pan and line with grease proof paper
  • Put the dates in a separate bowl and pour over boiling water, set aside and cover
  • Melt the chocolate and butter together, I used the microwave allowing it to cool slightly
  • Beat the eggs, sugars and vanilla until thick using an electric mixer,  then beat in the cooled chocolate mixture
  • Add the flour to the cocoa mix and mix until smooth
  • Drain the dates and fold them into the mixture, add the the nuts.
  • Bake for 40 minutes and allow to cool in the pan before cutting into slices
  • Enjoy on its own or with a cuppa.
