These healthy fruit balls are delicious and healthy and quite frankly hard to stop at one. I always get a bit peckish around 3.30pm, just when the kids are snacking on biscuits and dips. I try to be good and these are perfect for when you crave a bit of sweetness and something yummy without having the guilts.
I am not a nutritionist, but I know these ingredients are healthy.
- 1 cup of dried fruit, dates, figs
- 1 cup of raw nuts, hazelnuts, pecans, cashews
- 1/3 cup coconut oil
- 1/3 cup rolled oats
- 2-3 teaspoons of cacao powder
- coconut for rolling
Get out your blender and blend all the ingredients together. The mixture will be a bit sticky and should be able to hold together when squeezed in your hand. You can add a bit of vanilla extract or a teaspoon of water if the mixture is a bit dry.
Roll them into little balls and then roll them in coconut.
Delicious as a mid morning snack with coffee or a cup of tea. Warning! teenage boys will devour the lot! I tend to make an announcement saying these are my healthy treats that you won’t like. Works every time!
Store in the fridge in an air tight container.
